A sweet, balanced coffee with a medium body and an elegant finish where dark
chocolate and delicate spice add depth while maintaining exceptional smoothness.
The Tseltal Highlands of Chiapas
The mountains of Tenejapa are covered by cloud forests and traditional
shade-grown coffee farms, creating ideal conditions for specialty coffee.
Cool temperatures, frequent mist, abundant rainfall and fertile soils allow
the cherries to ripen slowly, developing remarkable complexity and sweetness.
Two-thirds of the region remain protected as native forest and traditional
coffee farms, while local families also cultivate maize and home gardens that
support their livelihoods.
Sibactel Community Mill
Founded in 2020 by Caféología, the Sibactel Community Mill brings together
around 90 Tseltal coffee producers working collectively to
improve coffee quality while preserving their cultural identity.
More than a processing facility, Sibactel is a shared learning space where
farmers and agronomists exchange knowledge on harvesting, fermentation,
drying and quality control, strengthening both the local economy and the
future of specialty coffee in the region.
